Ground Beef Taco Cabbage Skillet

Ingredients 

1 pound ground beef  

1 small onion, diced  

2 cloves garlic, minced  

1 teaspoon chili powder  

1 teaspoon cumin  

1 teaspoon paprika  

1/2 teaspoon salt  

1/4 teaspoon black pepper  

1/4 teaspoon cayenne pepper (optional)  

4 cups green cabbage, shredded  

1 cup diced tomatoes (canned or fresh)  

1/2 cup beef broth  

1 cup shredded cheddar cheese  

2 tablespoons olive oil  

Chopped fresh cilantro, for garnish  

Sour cream, for serving (optional)  

Direction 

1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.  

2. Add the minced garlic and ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spatula, about 5-7 minutes.  

3. Stir in the chili powder, cumin, paprika, salt, black pepper, and cayenne pepper (if using). Mix well to combine.  

4. Add the shredded cabbage, diced tomatoes, and beef broth to the skillet. Stir everything together and cover the skillet. Cook for about 10-15 minutes, stirring occasionally, until the cabbage is tender.  

5. Remove the lid and sprinkle the shredded cheddar cheese over the top. Cover again for a few minutes until the cheese is melted.  

6. Serve hot, garnished with chopped cilantro and a dollop of sour cream if desired.

Million Dollar Ravioli Casserole

Ingredients:

1 lb ground beef

1 small onion, chopped

2 cloves garlic, minced

1 jar (24 oz) marinara sauce

1 can (15 oz) crushed tomatoes

1 package (25 oz) frozen cheese ravioli

1 cup ricotta cheese

1/2 cup sour cream

1 package (8 oz) cream cheese, softened

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tbsp Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped, for garnish (optional)

Instructions:

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.

In a large skillet, cook the ground beef, chopped onion, and minced garlic over medium heat until the beef is browned and the onion is soft. Drain any excess fat.

Add the marinara sauce and crushed tomatoes to the skillet. Stir to combine and let simmer for 5 minutes. 

In a medium bowl, mix together the ricotta cheese, sour cream, and softened cream cheese until smooth.

Spread a thin layer of the meat sauce on the bottom of the prepared baking dish.

Place half of the frozen ravioli in a single layer over the meat sauce.

Spread the ricotta mixture evenly over the ravioli.

Sprinkle 1 cup of the shredded mozzarella cheese over the ricotta mixture.

Add another layer of meat sauce over the mozzarella cheese.

Place the remaining ravioli in a single layer over the meat sauce.

Top with the remaining meat sauce, shredded mozzarella cheese, and grated Parmesan cheese.

Sprinkle Italian seasoning, salt, and pepper over the top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.

Let the casserole cool for a few minutes before serving. Garnish with chopped fresh parsley if desired. Enjoy!

INGREDIENTS

* 1/4 cup butter, melted but cooled slightly

* 4 large eggs

* 3/4 cup granulated sugar

* 1 pinch salt

* 2 cups milk

* 2 teaspoons vanilla extract

* 1/2 cup all purpose flour

* nutmeg, for topping

INSTRUCTIONS

1. Preheat oven to 350 degrees F.

2. Put all the ingredients in a blender or food processor.

3. Blend for 30 seconds.

4. Pour into a 9.5 inch pie plate and sprinkle with nutmeg.

5. Bake for 45 minutes in middle of oven or until set.

NOTES

You can add 1 cup of flaked coconut to make coconut cream pie, or lemon extract and grated lemon zest to make lemon cream pie.

Potato Pancakes with Savory Beef and Cheese 


Ingredients:

For the Pancakes:

- 4 medium-sized potatoes, peeled and grated

- 2 large eggs

- 2 tablespoons all-purpose flour (or cornstarch for gluten-free)

- 1/4 teaspoon garlic powder

- Salt and pepper to taste


For the Filling:

- 1 pound ground beef

- 1 small onion, finely chopped

- 2 cloves garlic, minced

- 1/2 teaspoon paprika

- 1/4 teaspoon ground cumin

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 1 cup shredded mozzarella or cheddar cheese


Additional:

- Vegetable oil, for frying

- Chopped fresh parsley (optional, for garnish)


Instructions:


Prepare the Pancakes:

1. Grate the potatoes and squeeze out any excess liquid using a clean kitchen towel or cheesecloth.

2. In a large bowl, combine the grated potatoes, eggs, flour, garlic powder, salt, and pepper. Mix everything together until well combined.


Cook the Filling:

1. Heat a skillet over medium heat and brown the ground beef. 

2. Add the chopped onion and minced garlic, cooking until softened.

3. Season with paprika, cumin, salt, and pepper. Remove from heat and let cool for a few minutes.

1. Take a handful of the potato mixture and flatten it into a thin pancake shape.

2. Add a spoonful of the beef filling on top, then sprinkle with shredded cheese.

Black Pepper Chicken Wings with Mushrooms Recipe 

 

Ingredients:

 

- 1.5 lbs chicken wings, separated into drumettes and flats (tips discarded, optional)

- 8 oz mushrooms, halved or quartered if large

- 2 tbsp soy sauce

- 1 tbsp oyster sauce (optional, adds umami)

- 1 tbsp black pepper

- 1 tbsp cornstarch

- 1 tbsp brown sugar (or to taste)

- 2 tbsp vegetable oil

- 2 cloves garlic, minced

- 1 scallion, thinly sliced (for garnish)

 

Instructions:

 

1. Marinate Chicken: In a bowl, combine the chicken wings with soy sauce, oyster sauce (if using), 1/2 tbsp black pepper, and brown sugar. Mix well and let marinate for at least 30 minutes (longer is better for deeper flavor).


2. Prepare Sauce: In a separate small bowl, whisk together the cornstarch with 2 tablespoons of water until smooth. Set aside.


3. Stir-fry Chicken: Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken wings and stir-fry until browned on all sides and mostly cooked through, about 8-10 minutes. Remove the chicken from the skillet and set aside.


4. Stir-fry Mushrooms: Add the remaining 1 tbsp vegetable oil to the skillet. Add the minced garlic and stir-fry for about 30 seconds until fragrant. Add the mushrooms and stir-fry for 3-4 minutes until softened and slightly browned.


5. Combine and Simmer: Return the chicken wings to the skillet. Add the remaining 1/2 tbsp black pepper. Pour the cornstarch slurry over the chicken and mushrooms. Stir to combine and cook for 1-2 minutes, or until the sauce has thickened and coats the chicken and mushrooms nicely.


6. Garnish and Serve: Garnish with the sliced scallion. Serve immediately.  This dish is delicious on its own or with rice.

 

Notes:
