Avocado & Spinach Egg Salad
Creamy, nutrient-dense, and low-carb
Ingredients:
4 large eggs, hard-boiled and chopped
1 ripe avocado, mashed
1 cup fresh spinach, finely chopped
¼ cup red onion, finely chopped
1 tbsp Greek yogurt
1 tsp Dijon mustard
1 tbsp lemon juice
Instructions:
In a bowl, mix all ingredients until creamy and well combined. Serve on its own, in lettuce wraps, or with low-carb crackers.
