This delightful smoked salmon mousse is a creamy and flavorful appetizer perfect for gatherings or as a light snack. It boasts a rich, smoky flavor combined with a soft, silky texture that will impress your guests.


Equipment

1 blender or food processor

1 mixing bowl

1 rubber spatula

1 serving dish or ramekins

1 plastic wrap (optional)

Ingredients

  

8 oz smoked salmon, chopped

8 oz cream cheese, softened

¼ cup heavy cream

2 tablespoons fresh lemon juice

1 tablespoon fresh dill, chopped optional

Salt and pepper to taste

Crackers or bread for serving


Instructions

In a blender or food processor, combine the chopped smoked salmon and cream cheese. Blend until smooth and well combined.

Add the heavy cream and lemon juice to the mixture. Blend again until the mousse is creamy and airy.

If using, fold in the chopped dill, and season with salt and pepper to taste. Blend briefly to combine.

Transfer the mousse into a mixing bowl and use a rubber spatula to ensure it is well mixed.

Spoon the mousse into a serving dish or individual ramekins. Smooth the top with the spatula.

Cover with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the mousse to firm up.

Before serving, garnish with additional dill or smoked salmon if desired. Serve with crackers or bread.


Notes

For a low-carb option, serve the mousse with cucumber slices.

You can adjust the seasoning to your preference, adding more lemon juice for tanginess or more dill for a herbal note.

This mousse can be made a day in advance, making it a convenient choice for entertaining.

Crispy on the outside, tender and cheesy on the inside – these cheesy chicken fritters are perfect for lunch, dinner, or even as a party appetizer!

Ingredients:

1½ lbs chicken breasts, finely diced

2 large eggs

⅓ cup mayonnaise

⅓ cup all-purpose flour

1 cup shredded mozzarella cheese

2 tbsp fresh dill or parsley, finely chopped

½ tsp garlic powder

½ tsp salt (or to taste)

¼ tsp black pepper

2–3 tbsp oil for frying

Instructions:

1️⃣ In a large bowl, combine eggs, mayonnaise, flour, mozzarella, herbs, garlic powder, salt, and pepper.

2️⃣ Add the finely diced chicken and mix until all pieces are well coated.

3️⃣ Cover the bowl and let the mixture rest in the fridge for about 30–60 minutes (this helps it hold together better).

4️⃣ Heat a little oil in a non-stick pan over medium heat.

5️⃣ Scoop small portions of the mixture into the pan (about 1–2 tbsp each) and flatten slightly into fritters.

6️⃣ Cook 3–4 minutes per side, until golden brown and the chicken is cooked through.

7️⃣ Place on paper towels to drain excess oil.

Serve warm with garlic sauce, ranch, or your favorite dipping sauce. So easy and so good!

Ingredients:


For the Meatballs:


1 lb ground chicken

1/4 cup breadcrumbs

1 egg

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 green onions, finely chopped

Salt and pepper to taste

For the Curry:


1 tablespoon coconut oil

2 tablespoons Thai green curry paste

1 can (14 oz) coconut milk

1 cup chicken broth

1 cup bell peppers, sliced

1 cup zucchini, sliced

1 tablespoon fish sauce

1 tablespoon lime juice

Fresh basil and cilantro for garnish

Directions:


Make the Meatballs:


In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, ginger, green onions, salt, and pepper. Mix well and form into small meatballs.

Cook the Meatballs:


In a large skillet over medium heat, add a bit of oil and cook the meatballs until browned on all sides. Remove and set aside.

Prepare the Curry:


In the same skillet, add coconut oil and the green curry paste. SautΓ© for about 1 minute until fragrant. Pour in the coconut milk and chicken broth, stirring to combine.

Add Vegetables:


Add the bell peppers and zucchini. Bring to a simmer and let cook for 5 minutes.

Combine and Finish:


Return the meatballs to the skillet, add fish sauce and lime juice. Simmer for an additional 10 minutes until everything is cooked through.

Serve:

 • 200 g shrimp (chopped small)

 • 200 g crab meat (fresh, canned, or imitation)

 • 2 garlic cloves (minced)

 • ½ tsp paprika

 • Salt & pepper


Creamy Dip Mixture

 • 200 g cream cheese (softened)

 • ½ cup mayonnaise

 • ¼ cup sour cream

 • 1 cup shredded mozzarella

 • ½ cup shredded cheddar

 • ¼ cup grated parmesan

 • 1 tbsp lemon juice

 • 1 tbsp chopped parsley

 • Optional: ½ tsp Old Bay or Cajun seasoning for extra flavor


Topping

 • Extra mozzarella + cheddar

 • Paprika or chili flakes

 1. Melt butter in a pan.

 3. Add shrimp → cook 1–2 minutes until just pink.

Ingredients:  

4 lobster tails, 4 tbsp unsalted butter, melted, 3 cloves garlic, minced, 1 tbsp fresh lemon juice, 1 tsp paprika, 1/2 tsp salt, 1/2 tsp black pepper, 1/2 tsp cayenne pepper (optional), 1 tbsp fresh parsley, chopped, Lemon wedges for serving.


Directions:  

1. Preheat the oven to 450°F (230°C). Using kitchen shears, cut the top of the lobster shell lengthwise, stopping at the tail. Gently pull the lobster meat out and place it on top of the shell while keeping it attached at the base.  

2. In a small bowl, mix melted butter, garlic, lemon juice, paprika, salt, black pepper, and cayenne (if using).  

3. Place the lobster tails on a baking sheet. Brush the garlic butter mixture generously over the lobster meat. Bake for 10-12 minutes, or until the meat is opaque and cooked through.  

4. Switch to broil for the last 2 minutes to achieve a slightly crispy, golden top.  

5. Sprinkle with fresh parsley and serve with lemon wedges.
